For over sixty years I've baked bread on the range in my kitchen in County Clare, the way my mother did before me. These are the recipes the family keeps asking for, written down properly, with every quantity in grams and in cups, so you can make them in Boston or in Ballyvaughan.

Nora Brennan in her farmhouse kitchen
Hello from Nora

Come in, come in, the kettle's on.

I'm Nora Brennan. I've a farmhouse kitchen in County Clare, in the west of Ireland, with a range that's older than some of my grandchildren and a St Brigid's cross over the window.

I learned to cook standing on a chair at my mother's range. I've been feeding a farm, a family and every neighbour who came through the door ever since, and I never wrote a thing down. It was all in my hands.

Well, I've written it down now. Every loaf, every stew, every cake, the way it was done in this kitchen, measured out properly so it'll come out right in yours.

“Sure, it's only flour and buttermilk and a bit of patience.”
What you'll be making

The kitchen, from the first loaf to Christmas.

Bread every day

Brown soda, white soda, spotted dog, treacle bread, potato farls and griddle bread. Buttermilk swaps for outside Ireland.

Potatoes the Irish way

Colcannon, champ, boxty, potato soup, and roast potatoes done right.

Stews and Sunday dinners

Irish stew, coddle, beef and stout, bacon and cabbage with parsley sauce, and a proper roast with stuffing.

Tea time

Scones, apple cake, rhubarb tart, barmbrack and porter cake, the things that sat on the table when the neighbours called.

A proper Irish Christmas

The Christmas cake fed from October, plum pudding, spiced beef, mince pies and the trifle, with a countdown to Little Christmas.

Measured for your kitchen

Every recipe in grams and cups, oven heats in °C, fan, °F and gas mark, with times and how many it serves.

Questions

Before you buy

Is this a printed book?

No. It's a digital book in PDF. Nothing comes in the post. You can print any recipe you like, or the whole book, at home.

Will it open on my phone or tablet?

Yes. Phones, tablets and computers all open a PDF on their own. There's nothing to install. Plenty of people keep it on a tablet propped up in the kitchen.

I can't find my download.

Look for the email from Gumroad about your purchase. It has a button to your book that works any time, on any device. Check your spam folder too.

I'm in America. Will the recipes work?

Yes. Every quantity is in grams and in US cups, oven heats are given in °C, fan, °F and gas mark, and there's a note on buttermilk and flour for outside Ireland.

Do I need a range?

No. Every recipe is written for an ordinary oven and hob. Where the range does something different, I tell you how to get the same result.

Is the type big enough?

Yes. It's set in a large, clear type with plenty of space, and you can zoom in on any screen.
